[QUOTE=", post: 2914"] Chocolate Chip Cookies - Straw's difficult child likes 1/2 cup butter (I use real butter & it doesn't hurt my child, but some say it has casein, so you might want to substitute) 1/2 cup sugar 1/2 cup brown sugar 2 eggs (you can use Ener-g Egg Replacer) 1 1/2 tsp vanilla (I use a little more) 1 1/4 cupes rice flour 3 Tablespoons Potato Flour 1 tsp baking powder (I get it from Miss Robens) 1 tsp. baking soda 3/4 cups chocolate chips Preheat oven to 375, bake 10 minutes Cream butter & sugars together. Add eggs & whip well. Stir in vanilla. Blend dry ingredients together (except c. chips). Mix into egg mixture. Mix in chocolate chips. Drop onto greased cookie sheet. I haven't researched what chocolate chips are gluten free/casein free & our vanilla came from Mexico. Remember that for 4 months my child had pretty much no sugar, no cookies, etc. (maybe 1/2 cup gatoraide, clear, 1 time per month). Now he gets treats more often, but I still try to really cut back on the sugar. Tomorrow I'm sending cookies to school, so he'll get two, but this is rare. I usually only send one cookie one or two times per week. AFter the first 4 months or so, we really eased up & allowed sugar & a few other things, but still trying real hard not to have gluten. Maybe Tracey knows what baking powder, baking soda & chocolate chips are okay to avoid the gluten/casein. I haven't contacted the manufacturers.
