I just made this recipe, I made 7 mini bread tins. The house smells wonderful and although I haven't tasted them yet, they're still cooling, my girlfriend, who gave me the recipe, says it's delicious. I'm giving them away as gifts to neighbors, etc. Just thought I'd share the recipe with you guys...............Enjoy!!
Pumpkin Mincemeat Bread Recipe
3 1/2 cups flour
1 1/2 cups sugar
2 TBL pumpkin pie spice
2 tsp baking soda
1 /1/2 tsp salt
1 1/2 cups brown sugar packed firmly
4 eggs beaten
2/3 cup water
2 cups canned pumpkin (not pie mix)
1 cup vegetable oil
1 1/2 cups prepared mincemeat (None Such, Cross and Blackwell)
1 cup chopped nuts
Sift flour, sugar, spice, baking soda and salt into a large bowl. Mix in brown sugar. Make a well in the center. Pour in eggs, water, pumpkin and oil. Stir well. blend in mincemeat and nuts. Pour into 3 greased 5 x 9 loaf pans or 6 mini's. Bake at 350 degrees for 1 hour (depending on your oven, reduce time for minis)
